Express dinner tonight, anyone?
Finding time to juggle our everyday demands is both art and science. The constant battle to keep the most important items at the forefront often pushes other things to the bottom of the list.
One of the items that was always on the backburner for me was my meals. It really didn’t matter… breakfast, lunch or dinner!
This bad habit really came to life when my kids started attending school. After drop-off the mission begins: exercise, grocery shopping, laundry, cleaning, errands, paying bills / bank, getting school supplies for that art project… you name it… (if you have a job, at best you’ll have an hour to get through the personal to-do’s).
Before you know it, here comes pick up time! Guess what? …. you did not eat… Now you are onto supervising homework, dwelling through pending to-do’s, listening to your child’s stories of the day, folding clothes and best of all getting ready for dinner!!!
I have to confess, cooking is not my thing… so my preferences in the kitchen department are easy and fast recipes that save you time and headaches!
Today I want to share with you one of my favorite recipes:
“Garlicky Broiled Salmon and Tomatoes”… in just 15 minutes
- 4 pieces of salmon (or your favorite fish)
- 4 tomatoes, halved
- ½ teaspoon paprika
- 2 tablespoons Olive Oil
- Herbs: dill or thyme
- 4 cloves garlic, sliced
- Lemon juice
- Heat broiler
- Season the fish and tomatoes with salt and pepper, dash of lemon juice, paprika, olive oil, garlic and herbs.
- Broil until the salmon is opaque throughout and the tomatoes are tender. 8 to 10 minutes.
