Cheddar and Roasted Red Pepper Tostadas

Cheddar and Roasted Pepper Tostadas (20 min)
- 1 red pepper (sliced)
- 2 crunchy corn tosdadas
- 2 tbs olive oil
- 1 clove garlic (sliced)
- 1 tsp fresh lemon juice
- Dash of paprika
- Dash of basil
- 1/2 cup cheddar (grated)
- Preheat oven to 400° F.
- Season the red pepper slices with salt, pepper, garlic, lemon juice, olive oil and paprika and put them in the oven for 15 min.
- Top the corn tostadas with the peppers and sprinkle the cheddar.
- Broil until the cheese melts, about 2 to 3 minutes.
