Healthy Greek Yogurt Pancakes

Breakfast is one the most important times of the day. Not only is it time to nourish our body but it is also a great way to establish the balance and cadence needed for the day ahead. Being grateful for the food we eat, what is important in our lives and the plans for the day ahead is great way to stay focused and have peace.

INGREDIENTS:

2 whole Large Eggs

1/2 tsp. Vanilla Extract

7 tbsp. All-purpose

Flour2 tbsp.

Sugar1 tsp.

Baking Soda1/2 tsp.

Salt1 c.

Greek Yogurt

Butter, For Serving

Warm Syrup, For Serving

METHOD:

Mix Greek yogurt in a large bowl with the dry ingredients. Stir until combined.

In a separate bowl, whisk eggs and vanilla, then pour into the bowl with the yogurt mixture.
Now stir until ingredients are blended.
Heat griddle or skillet over medium-low heat. Use olive oil cooking spray or a little butter to coat the surface. Scoop batter by ¼ cup portions onto the griddle and cook on the first side until bubbles form.
Flip and cook for another minute or so.
Serve with softened butter and warm syrup or honey.

Variations

Substitute plain Greek yogurt for any kind of flavored Greek yogurt (strawberry, blueberry, etc) you like.
Add blueberries or chocolate chips to the pancake batter.
Add a bit whipped cream to the pancakes to make them extra decadent!
